Agar Agar Powder

Agar Agar Powder is a hydrocolloid – a jelly-like substance which forms the supporting structure in the cell walls of certain species of algae, primarily the genera Gelidium and Gracilaria. In chemical terms, agar is a polymer made up of subunits of galactose with two main components: the linear polysaccharide agarose, and a heterogeneous mixture of smaller molecules called agaropectin.
